This is the  iDeba knife. It is made not only stainless steels and ceramics, but also Aoko (blue steel #2).The knives are made of Japanese swords technique for a long time, then they feature toughs and sharpness. Deba is indispensable for cleaning fish.  It is used to cut through hard bones and also to filet the fish. Thus, it is constructed with a thick spine while the tip is thin with an extremely sharp edge.

I studied Japanese cuisine in Japan. Japanese food is both very appealing to the eye and very tasty. At first I was very impressed about Japanese food therefore decided to study.It is difficult to skillfully cut and prepare fish and sushi. Within the sushi chef network most of them use Aritsugu knives. To skillfully prepare Japanese food, both knowledge and technique are necessary. Above that, the quality of the knives and equipment used are very important. If I compare Aritsugu knives to others, it is certain that Aritsugu is superior.
