This is the Santoku knife.

This is a Santoku knife made of steel sandwiched between stainless steel. The stainless steel part will not rust, but the steel part at the cutting edge will. 


It's much easier to maintain than a steel knife, and since the cutting edge is made of steel, it doesn't cut as quickly as stainless steel does.
