This is the Petty knife.
The shape resembles Gyuto but smaller. Often used for peeling fruits or to perform small intricate work.
It is a double bevel knife utilized by Japanese chefs.
This knife is a paring knife made of a single piece of alloy steel. The alloy steel itself is solid, and the knife is neither too hard nor too soft.
If you sharpen this knife properly, it will stay sharp for a long time. However, please avoid cutting hard objects.
This is a steel knife, so it will rust. After use, wipe off any moisture thoroughly. Be sure to wipe the handle well.
Rust may appear during use. If rust appears, simply polish it with a cleanser or similar and there will be no problem.
