This is the Betsuuchi Hamokiri (eel bone slicer knife) made of blue steel. It is used to perform honekiri on a pike conger fillet which has lots of small bones. Honekiri is used to slice or make incisions every 1-2 mm on an entire fillet of a pike conger to cut its tiny bones. While the blade towards the edge is thin to make minute and precise slices leaving only the skin intact, the spine of the blade is made thick in order to utilize the weight of the knife during each slicing motion.

I have a big interest in Japanese culture. I like sushi, tempura, soba and manga(Japanese comics) but I also enjoy samurai and ninja. I was surprised to hear that the sword which the samurai used to carry still exists today. I managed to order a ARITSUGU knife and scabbard through a friend in Japan. When I held the sword in my hands, I was overwhelmed and felt I had become a samurai ! On top of it, I also purchased a sword stand. Once I placed the sword on the stand, I felt a samurai aura around it. I can't use this sword for cooking, but feel very pleased to have it on display. (From Australia)
