This is the Sujibiki knife. It is made of carbon steel. There are many different types of western knives for handling meat, Sujibiki is one that's used to cut large hunks of meat into sections. In recent years, using Sujibiki to make sashimi has been increasing.
When I started working at this new restaurant, I was fortunate to receive one of these knives from the head chef. Aritsugu knives are very popular and I found that they are easy to use and cut very well.Obviously good for cutting fish used in traditional Japanese food, cutting meat, fruit, bread, bell peppers and vegetables, I'm able to maintain the full flavor of the ingredients with a beautiful presentation. How about having your name engraved on the bolster?
It is a free service. You can choose your name or something else you would like written on your Japanese knife. Please refer to #2 photo on the top page. You can have it done in English, Kanji or Katakana. The clients who ordered it were all very satisfied. Choosing to have your name engraved on a Japanese specialty knife would make it a quite unique.
